Groundnut Stew
(serves 4)

  • 3 cups water
  • 1 zucchini, chopped
  • ¾ cup chopped okra
  • 2 sweet potatoes, chopped
  • 1 onion, diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp ginger
  • ½ cup peanut butter
  • ½ tsp red pepper flakes
  • 2 tomatoes, diced
  • 1 cup tomato paste
  • 2 hard boiled eggs, chopped

Simmer zucchini, okra, sweet potatoes, onion, salt, black pepper, and ginger in water in a large pot until tender (about 10-15 minutes). Add peanut butter, red pepper flakes, tomatoes, and tomato paste to mixture. Stir well and simmer on low heat for about 15 minutes.

Serve over white rice and top with eggs.

My name is Al Hassan Harouna. I am 26 years old and live in the village of Wayamba in northern Ghana. When I was a small boy, our village school had very few teachers and few resources. Classes took place outside under a tree. Most days we would get one or two lessons and then were sent home without books or homework. After school, the boys would go to work in the fields and the few girls who attended would help with chores at home. I was fortunate, and moved to the city to attend high school. At 19, I returned to my hometown and found that the school had not changed much. There were only two teachers and no signs of real improvement. I knew in my heart that I had to do something, so I volunteered to teach first grade.

In 2004 Catholic Relief Services began the Quality Education Improvement Program in my village. The program provides teachers with formal training and helps increase community involvement in the school. Our school has really improved since the program began. We have more teachers, educational goals, lesson plans, and teaching materials. This is very significant for us. We are a small town where most girls still do not attend school, and boys have to go to work after class to help their families. A thriving school environment is vital for our town's and our country's future. After 7 years, I'm still teaching. I know that my work will make life better for my people.
